Vegan Chocolate Cardamom Baked Oatmeal

Hi Reader,

I made this on a whim with three bananas that were past their prime and whatever was in my pantry. Twenty minutes later, I had something that looked like it came from a brunch menu.

Chocolate Cardamom Baked Oatmeal - cocoa powder, a pinch of cardamom, vegan Greek yogurt, and hemp seeds stirred into the batter, topped with coconut whipped cream and a dark chocolate drizzle. It's scoopable, custardy, and tastes like dessert. It's also ~10g protein per serving with zero protein powder.

The cardamom is the thing. It's a Middle Eastern spice that makes chocolate taste more complex and interesting. You only need a quarter teaspoon, so it's subtle, but you'll notice it's there.

I've been making a batch every Sunday. It holds in the fridge for four days and reheats easily or can also be enjoyed straight from the fridge.
