Hi Reader, This is the meal I'd hand someone the week after surgery, and it's also just a genuinely good weeknight bowl if you're not recovering from anything at all. It's built the way I think about recovery nutrition in general: protein at every meal, anti-inflammatory ingredients where they make sense, and everything cooked soft instead of raw so digestion isn't working overtime. Sautéed tofu, crispy turmeric chickpeas, roasted sweet potato, wilted greens, and a hemp-tahini dressing that pulls the whole bowl together. About 18 grams of plant protein per serving.
