Café Cubano Black Bean Banana Breakfast Bake

Hi Reader,

Black bean banana breakfast bake. Cuban-inspired. Café Cubano in the batter, café Cubano coconut cream drizzle on top.

I grew up around strong Cuban coffee. My favorite was when visiting my abuelas and looking forward to my café con leche with a drizzle of leche condensada for that extra sweetness. That deep, slightly bitter, sweet espresso is a flavor that feels like home. This recipe is my way of building that into something you can meal prep on Sunday and eat all week.

Each square has 8 grams of protein and 8 grams of fiber!

The coconut cream espresso drizzle on top is optional, but, honestly, not really optional in my coffee-loving, sweet-tooth opinion.
