Creamy Edamame Spread on Toast with Za'atar (high-protein, 20 minutes)

Creamy Edamame Spread

Hi Reader,

I’ve been on an edamame kick, and this toast is my favorite result so far.

The spread is blended edamame and silken tofu with lemon, white miso, and a little sautéed garlic. It’s thick and creamy, but it isn’t hummus. I pile it on crisp toast with cucumber ribbons and pickled red onion, then finish with olive oil and a good sprinkle of za’atar.

It works as a snack, an appetizer, or a light lunch, and it comes together in about 20 minutes.
