New recipe: Vegan Guava Banana Bread 🍞

Vegan Guava Banana Bread

Hi Reader,

If you grew up on guava pastelitos (or even if you didn't), this one's for you.

I turned that guava pastelito flavor into a vegan banana bread. Silken tofu keeps the crumb soft without eggs, and real guava paste gives it actual guayaba flavor. The silken tofu and protein powder add an extra boost of protein.

Here's the process:

  • Blend the tofu, banana, soy milk, and maple syrup
  • Whisk the dry ingredients in a separate bowl
  • Fold them together, then fold in the guava paste
  • Bake for 45-50 minutes

That's it. Quick and simple. No eggs, no dairy needed.

Let me know if you make it. I always love seeing your versions.
