My mom's lentil soup - 22 grams of Protein and 26 grams of Fiber 🌱

Hi Reader,

This one's personal.

My mom made this lentil soup for me growing up, and it's still on my weekly rotation. One pot, five vegetables, a full bag of lentils, and a sofrito that ties it all together.

Meal prepping this perfect soup in the Instant Pot makes it so easy.

Here's why it stays in my rotation:

One bowl gets you close to 22 grams of plant protein and a full day's worth of fiber (26 grams!). As a surgeon, eating for recovery is something I think about constantly, and this soup checks every box: fiber for gut motility, protein for tissue repair, iron and potassium from the root vegetables. It's soft, easy to digest, and doesn't ask you to track a single thing.

This is exactly what I mean when I talk about the Fiber-Forward Plate. High fiber, high protein, no tracking, no sacrificing flavor. This soup is the plate in a bowl.
