Pumpkin bread you eat with a spoon 🍂

Pumpkin bread blended oats

Hi Reader,

Fall means pumpkin everything shows up in my feed, and most of it is sugar with a pumpkin spice label slapped on. I wanted something that actually tastes like pumpkin bread, gives me protein and fiber, and doesn't require me to turn on my oven.

These no-bake pumpkin bread blended oats are exactly that. They taste almost exactly like pumpkin bread. 12g protein and 6g fiber per jar, which is enough to actually hold me over between cases, not just delay hunger by twenty minutes.

Here's how it works: blend everything except the oats and almond flour until smooth, pulse those in at the end so you keep some texture, then pour into jars and let it sit in the fridge. That's it. No oven, no stovetop!
